<p>Thanks Christy for this great question!</p>
<p>In general cream based and potato soups do not freeze well, &#8220;the potato&#8217;s cellular structure breaks down in the freezer&#8221; says my good friend and mentor, Rita Heikenfeld from abouteating.com. Although it&#8217;s better to freeze than to pitch it &#8212; so Rita just reheats is slowly and stirs in a bit of cheddar right before serving. <p>Bean soups and broth based soups freeze perfectly! So double-batch those when you can.</p>
