Cooking Cuban at Home Cooking Class

Personally speaking Cuban food is my comfort food. Growing up in a Cuban-American home with my Abuela (grandmother) in the kitchen brings back happy memories.

For many of you, Cuban food is something rare and only available in tropical location with a heavy population of Cubans. Others may believe that Cuban food is similar to other Hispanic dishes… some may be similar, but none are the same!

Join me as I demystify Cuban Cooking at Home on March 3rd at Jungle Jims in Fairfield, Ohio (Cincinnati area)

Menu includes:

Black Beans & Rice
Chicken Fricassee
Cuban Style Breaded Steak
Abuela’s Flan

What’s for dinner? …

… a little bit of this and a little bit of that!

According to my meal plan, I was making pasta with basil pesto. Although, between the snow (in the mid-west) and getting caught up on the computer, 6:30PM rolled around and I had not started dinner. Sound familiar?

So, I switched things around a little bit and made a delicious dinner on the fly. Here’s what I did….

1 pound of short shaped pasta
Approx 2 tablespoons of Olive Oil
half of (a left over) sweet onion, diced
2 garlic cloves, roughly chopped
half of (a left over) red pepper, chopped
1 carrot, julienned
Approx ¼ cup of wine (I used red, because it was what I had opened, I’m sure white would work well too!)
Approx 3 tablespoons of walnuts (or pine nuts)
3 handfuls of fresh spinach
Salt and Pepper to taste
Handful of fresh basil (from my aero-garden)
Parmesan cheese (for topping)

1. Boil pasta until done.
2. Heat oil in sauté pan until hot (over high to med-high heat), add onions, garlic, carrots and pepper and cook for about 5 minutes, or until onions are translucent and carrots are al-dente.
3. add in wine, cook for about 1-2 minutes.
4. add nuts and cook for another minute.
5. add spinach, basil, salt and pepper to taste, cook until spinach is wilted. Remove from heat. Mix in with cooked pasta.

Top with parm and serve!

This was a no brainer! Quick, easy and delicious!

Over the summer Rita Heikenfeld invited me to be a guest on her Cooking with Rita show on Union Township television. She was able to piece together a small clip of us making the Cuban Yellow Rice dish and posted it on her About Eating YouTube Channel.

My brother, another wonderful cook, reminded me you can also substitute about 1/2 of the chicken broth with either beer and/or wine.
