Splenda Recipes for Diabetics

I had a friend ask me about recipes using Splenda because they found out they are now diabetic… so I thought I’d share the information I shared with them:

My colleague, Rita Heikenfeld, is a fabulous chef and she has several Splenda recipes on her website – I’ve searched her site and this is what I came up with….. it’s on www.abouteating.com

1.      chocolate mousse

I’ve replaced the sugar, which is the culprit, with Splenda, a natural sugar Add cream, cocoa and Splenda. Start mixing on low speed until mixture loses

2.      Banana Muffins

¾ cup Splenda 1 egg 1 tsp baking powder 1 tsp baking soda ½ tsp salt ¾ cup regular flour Add Splenda and slightly beaten egg. Add melted Smart Balance.

3.      Fruit Leather

If desired, sweeten to taste with sugar, honey, Stevia or Splenda. Add cinnamon or pumpkin pie spice to taste. I like Kroger brand.

4.      healthy snacks for kids

If desired, sweeten to taste with sugar or splenda starting with 1/2 cup. Add cinnamon or pumpkin pie spice to taste. Do this while fruit is still warm.

5.      poppy seed dressing

1 cup sugar or substitute (I like Splenda) ¼ cup diced onion or more to taste 1- 1/4 to 1-1/2 cups Canola oil (or use 1 cup Canola and ¼ to ½ cup water)

6.      Strawberry Salad

7.      Lemon Curd Recipe

3/4 cup granulated sugar or 1 cup Splenda 3 tablespoons corn starch Dash salt 1 cup water 1 whole egg, room temperature, lightly whisked
