Quick and Easy Turkey — anytime of the week
It doesn’t have be November to enjoy a delicious and juicy turkey meal. As of Tuesday 8/22/08, Krogers has the bone in turkey breasts on sale. So, the frugal Betty picked one up!
I washed and dried my turkey breasts and rubbed the following mixture to the bird… 1 part each of (i.e. 1 tsp) of dried oregano, thyme, garlic powder, kosher salt, and 1/2 part fresh ground pepper. I then drizzled some Meyers Lemon Olive Oil and covered the bird with sliced onions and about 4-5 bay leaves.
Placed the birds in a 325 degrees, pre-heated oven for about 3 hours. The turkey breast was about 5+ lbs. The trick to a juicy bird is placing a temperature probe. I set my alarm for 170F — and removed the turkey breast at that time. I covered it with foil until I was ready to carve and serve. (Let rest for about 15 min’s.)
Yes… I did serve it with mashed potatoes and gravy that I made with chicken stock and the drippings from the turkey breast.
This is a great meal to deliver to anyone who’s ill or home bound (a wonderful alternative to the lasagna they always receive) and should give you left overs for sandwiches the next day!
